2 green onions, chopped
1/4 cup reduced-fat mayonnaise
2 tablespoons sweet pickle relish
1 tablespoon Dijon mustard
1/4 teaspoon ground turmeric
1/4 teaspoon salt
1/8 teaspoon cayenne pepper
1 package (12.3 ounces) silken firm tofu, cubed

4 lettuce leaves
In a small bowl, combine the first eight ingredients. Gently stir in tofu. Spread over four slice
s of bread; top with lettuce and remaining bread. Yield: 4 servings.

, and found it surprizingly good and egg salady but a bit hot for our tastes. Our family isn't into heat...but we all agreed we'd love to try it again without the spices.
Get 3 slices of bread, and de-crust, this makes them pretty. Pretty food tastes the best and is usually calorie free. I like to cut the bread first, if I don’t do this and wait till the SAMMICH is completed then I forget to cut it as I am in too much of a hurry to NOM. But it’s really up to you.
Take 2 slices of bread and thinly spread butter, or marg if you are a poor student/don’t want to be a FATTY. Add mesclun salad mix. Be generous.
